Breakfast, the most important meal of the day!
That’s what my mom always told me growing up. I take the same approach to feeding my girls in the mornings!
It’s easy to do two things when it comes to breakfast.
First, it’s easy to sugar up! Everything on the “breakfast” aisle in the grocery store is full of sugar. I try my best not to feed that to my family first thing in the morning!
Second, it’s easy to blow the budget. Breakfast meat is super yummy, but gets expensive when you eat it every single day of the week.
Here is what our family does to keep the sugar and budget in check, but still have a great breakfast every morning!
We stick to a few basics that help keep everything relatively inexpensive but still healthy and filling!
Oatmeal
This is a super basic thing, but something we eat almost every single morning.
Oats are super filling and a great source of a ton of vitamins and minerals as well as fiber! They’re easy and quick to prepare, too!
We always eat our oats sweetened with unsweetened apple sauce and topped with raisins. This keeps them from being chocked full of butter and sugar, and it’s super yummy.
Oats the way we prepare them, cost about $0.50 a serving.
Breakfast Casserole
This breakfast casserole is SO good. It freezes perfectly, and any leftovers fill up a tortilla and make a delicious breakfast burrito to stash in the freezer.
It’s the perfect recipe to make if you are feeding a crowd, or want something you can prepare the night before!
When we make it, it usually makes about 16 servings, making it come in at about $0.51 a serving.
Egg Scramble
There is nothing ingenious about this idea for a breakfast, but it’s a great way to save money and get some extra veggies into your diet.
I love to throw in whatever veggies I have leftover in the refrigerator (spinach is so good in eggs!) Along with some cheese, or leftover chicken. Basically, using up all of the ingredients that would probably go bad anyways, and making a yummy breakfast!
Since we’re using leftovers for most of the scramble, it only costs around $0.35 a serving!
Smoothie Bowls
I’m a fan of a smoothie anytime of the day, but they’re super yummy at breakfast!
Frozen fruit along with milk kefir or yogurt, peanut butter and spinach make this a delicious and super healthy breakfast option! Throwing in some oats makes it even more filling.
Topping it with some granola or berries is SO good.
Oatmeal Pancakes
Pancakes are DELICIOUS and SO cheap, but healthy they are not. There are a ton of ways to make “healthy” pancakes, but I think one of the simplest is just by trading out the flour with oats!
This way, you have good hearty fiber and tons of other nutrients filling up your belly. Super cheap to make too!
