This is our last week of my husband doing keto for a little bit.
I have to admit, I didn’t have the greatest attitude at times because the cooking felt very restrictive! I normally use a lot of beans, rice, potatoes and fruit in our daily cooking and eating.
However, it was a really fun experience, and the next time he cycles back onto keto I will be much more prepared! I feel like I have a an arsenal of yummy and affordable meals that our family loves and also check the keto boxes.
Eating keto entrees was really good for my kids palates too!
I knew that it had been a good experience when my 2 year old rice loving daughter shoved brussels sprouts in last night at dinner.
One of my main goals is for my kids and husband to enjoy food that is also healthy for them! Second to that, is staying on a tight budget.
On the budget note, I am starting a new idea of reduced ingredient meal plans for the next several weeks.
I’m going to only be purchasing 5 main ingredients for the dinners for the next 10 days. Then, getting creative in the kitchen!
My hope is that this will be an easy and simple way to really cut down on grocery costs, and also stretch my creativity in the kitchen! We will see!
This next cycle (10 days) is the first cycle doing this, and it’s also our last cycle of my husband eating a ketogenic diet.
My youngest daughter also turns 1 next week, so we have a cake mix and frosting in the mix for her too!
