Yay! A new year! This will be an exciting one in our family because we’ll be welcoming our third baby girl in June! Welcoming a new life into the world is SO stinking exciting, and we are so incredibly thankful and looking forward to seeing this tiny little human grow!
Our temperatures have been crazy high the past few weeks (like in the 70s!) and we’re expecting a dip this coming week so that it actually does feel like winter. I’m looking forward to a little bit of cold and snow, but I’m really excited that January means we’re one step closer to spring!
Here is what’s on the menu for our family for the next 10 days!
Meal Plan for January 1-10

A Couple of Recipes
Dirty Rice
This was one of my favorites growing up. As an adult, I learned the secret to its goodness is butter. Isn’t it always butter?
Ingredients:
-1 cup of long grain or jasmine rice
-1 can of beef broth
-1 stick of unsalted butter
Combine all ingredients in an oven safe glass bowl. Cover and bake at 350 for 1 hour.
Beef and Brown Gravy with Rice
Ingredients:
-1 tbsp olive oil
-Beef (of literally any kind… we use cubed steak, stew meat, steak, and even ground beef patties)
-1 packet of brown gravy mix (this is our favorite!)
-2 cups of water
-2 cups prepared white rice
Brown meat in olive oil at medium heat in dutch oven or skillet with lid until cooked through. Prepare brown gravy as directed on packaging. Add into beef in skillet. Cover and let simmer for 1-3 hours. Serve over white rice.
