We just had a 55 degree day to mark the first day of February! After we had temperatures in the teens all last week, that was a welcome treat! It also is a great reminder that summer will come again!
It’s crazy the imagine that this summer we’ll have another tiny baby to hang out with! There’s something wonderful about having a baby in the summer. Everything just seems a little bit easier when you can get outside everyday (even the nights without any sleep!)
I felt a little bit like mixing things up this cycle, but we’ve kept a lot of our family favorites for this budget friendly meal plan!

Tacos/Taco Salad
This one is as easy as it can get! 1 pound ground beef (or turkey) and one can of black beans seasoned with taco seasoning packet according to packet instructions. Served over shredded lettuce for taco salad or in tortilla for tacos!
Beef and Brown Gravy over Rice
1 pound of cubed steak seared and then simmered in brown gravy made according to packet directions. Served over white rice!
Turkey Stroganoff
1 pound ground turkey browned and seasoned to taste. Remove from skillet and melt 3 Tbsp butter and add 1 Tbsp flour and whisk until cooked down. Add in 1/2 cup beef broth and continue whisking until combine. Add one can cream of mushroom soup, and 8 ounces of sour cream. Season to taste. Add ground turkey back in and let simmer. Serve over egg noodles (or gluten free noodles for us!)
Beef and Broccoli
Chop 10 ounces of sirloin into bite sized pieces. Sear in sesame oil. Add in 1/2 cup soy sauce (or coconut aminos), 1/2 cup beef broth, 1 tsp minced garlic and 1/2 tsp sesame oil. Let cook on low heat for up to 8 hours! Add in broccoli 30-40 minutes before time to serve. Serve over white rice!
Lemon Pepper Salmon
Season each side of salmon fillet with lemon pepper seasoning. Place 2 pats of butter over each salmon fillet. Cook in a 400 degree oven for about 20 minutes or until cooked to 165 degrees according to meat thermometer.
