Fall is coming! Is anybody else excited for the warm and savory meals that just fit perfectly into the cooler days? Until then, I’ll be fitting in as much in season produce as possible! Even though my family is getting a little bit tired of zucchini!

Baked Italian Chicken
Pour any Italian dressing on top of trimmed chicken and let marinate for at least 2 hours. Place on sheet pan and cook for about 20 minutes at 350 or until heated through to 165 degrees.
Cauliflower Rice Taco Skillet
Brown 1-2 pounds of ground beef and drain excess fat. Pour in one packet of taco seasoning with 1/2 cup of water. Let simmer for a couple of minutes. Prepare cauliflower rice according to package instructions and then pour into ground beef mixture. Stir to combine and top with cheese. Let simmer until cheese is melted and then serve.
