
If you’ve been following along this week, you already know I found some great Kroger digital coupons and Weekly Deals — especially on meats, produce, and pantry staples.
This meal plan came directly from those deals, which means every dinner here was built to make the most of the sales without sacrificing variety or flavor. I don’t buy things just because they’re cheap — I build meals around the items my family actually eats. When the two overlap (great deals and foods we love), that’s where the real savings happen.
1. Beef Roast with Carrots and Potatoes
When Kroger runs a good sale on roast, I always grab one or two (or more!!). It’s one of those hearty dinners that feels like comfort food but can still be really affordable when the meat is marked down.
I pair it with carrots and potatoes — both on sale this week — and cook everything low and slow in the crockpot. This one makes plenty, so I always plan to use the leftovers later in the week for lunches.
2. Smoked Sausage, Broccoli, and Potatoes Sheet Pan
Smoked sausage is another item I stock up on when it’s part of the Weekly Digital Deals. It’s quick, filling, and makes for an easy one-pan meal.
I slice up sausage, toss it with broccoli florets and diced potatoes, drizzle with olive oil, and bake until everything is browned and crispy. Minimal effort, maximum flavor. My family loves this one!
3. Bacon and Eggs with Berries
Breakfast-for-dinner is a family favorite and a money-saver. Bacon was on sale this week for $3.99, and eggs are $1.99! Paired with a couple of cartons of $1.77 berries, that brings this meals total to $9.52!
I serve them up with whatever fruit I can find marked down — this week it was fresh berries. It’s simple, fast, and always a hit with the kids.
4. Chicken and Rice with Green Beans
Chicken and green beans are both on sale this week, and together they make a complete meal that’s healthy and inexpensive.
I’ll bake it into a simple casserole-style dish — perfect for leftovers or lunches the next day.
5. Beef Roast (Round Two) with Carrots and Mashed Potatoes
I cook the beef and carrots on low in the crock pot all day and then serve it over mashed potatoes. An easy, filling dinner that doesn’t feel like a repeat.
6. Smoked Sausage with Broccoli and Rice
This meal comes together in less than 20 minutes, which makes it perfect for busy nights. I throw the sausage and broccoli on a sheet pan with a little bit of olive oil. Then I cook a couple cups of rice on the stove-top. Sometimes I make rice in the oven with the sheet pan, but my daughter LOVES plain white rice so I try to make that for her when I can!
It’s simple, hearty, and stretches ingredients just enough to keep the week budget-friendly.
7. Picnic Dinner Night
By the end of the week, I love doing what I call a “clear-the-fridge picnic.”
We’ll pull out lunch meat, boiled eggs, cheese, crackers, fruit, and veggies — basically anything that’s leftover or easy to snack on. I’ll set everything out on the table or make little snack plates for everyone.
It’s casual, low effort, and the kids think it’s a treat.
