I got an ” target=”_blank” rel=”noreferrer noopener”>dutch oven and I’m good to go. I’ve been on the fence about joining in on the Instant Pot train for a while.
Part of me just doesn’t like to join in on trendy things…I think it’s my rebellious spirit of my childhood coming out.
Mostly, I just didn’t want to have to store any other thing in my kitchen!
We have a really small kitchen that doesn’t include a pantry or very much storage. Every single piece of real estate is valuable!
I was anxious about giving up a huge chunk of cabinet space to store the Instant Pot.
I have had it for about 2 weeks now, and I can honestly say it is worth its weight in gold!
It makes cooking as a mama of 2 littles so simple.
I can put something in to cook and set it and forget about it.
It cooks perfectly and then stays nice and warm without being overcooked until I can come back to get it out!
The sauté function is crazy nice. I HATE getting a ton of pots and pans dirty just to create one meal. With the Instant Pot I don’t have to!
It cooks rice perfectly every single time, and makes preparing meat to go into other dishes so easy and fast.

Everyone in our house loved this one!
My husband (our Keto eater) ate just the beef and broccoli, while the girls and I put it over rice (cooked in the Instant Pot!!)
So yummy and easy.

This is a different way to get a lot of vegetables in!
Creamy Chicken with Spinach
I used a variation of this recipe without the sun dried tomatoes.
Instant Pot Shrimp, Sausage and Zucchini
This one I don’t even follow a recipe. I chop up an entire andouille sausage, and pour a pound of frozen shrimp into the pot. Add about 3 tablespoons of butter and some old bay seasoning!
I cook it on high pressure for 3 minutes.
After it’s done, I throw the chopped zucchini in with the meat and sauté it for about 2 minutes.
That’s it!
So easy and so delicious!
Instant Pot Mexican Ground Beef
When I first thought of the Instant Pot, I definitely did not think of it to cook ground beef.
I was so wrong!
Just 3 minutes of cook time and it’s ready to be broken up and served! So fast and easy and hands free. Hands free is SO important when you have two toddlers that want to be in your arms all of the time!
We used this on top of cauliflower rice to make burrito bowls.
Delicious!
